Dates are one of the tropical fruits with a thin skin, sweet taste and a hard kernel. The fruits of the date palm tree hang in the form of large clusters from its branches. The palm tree is 10 to 20 meters high and has large leaves. Date species is widespread mainly in the northern hemisphere and in Iran, Pakistan, Iraq, Saudi Arabia and other Arab countries, some countries in North Africa and the United States, and is also found in the southern hemisphere. Archaeologists have attributed the construction of groves to 5,000 years ago, which indicates the antiquity of this fruit.
The most important dates species planted and produced in Iran include Estamaran in Khuzestan, Mazafati in Kerman and Bam, Zahedi and Pyarom in Hajiabad Hormozgan, and Kabkab in the Bushehr groves.
Ripe dates are brown, light brown and dark brown depending on the its type. Fresh dates are classified into soft, semi-dry and dry, depending on the percentage of its moisture. In general, dates contain 25% sucrose, 50% glucose and albumin, pectin and water. Dates are rich in vitamins, fiber and many nutritive components which are useful for body’s immune system. Most of the weight of date is carbohydrates and beneficial sugars, so it produces lots of energy in the body. Dates have large amounts of dietary fiber, so it is especially important in a healthy slimming diet. It has been claimed by many nutritionists that dried date is a great source of some minerals such as iron, potassium and calcium.
In recent years, date is more widely used in the food industry and various types of date byproducts have been produced in this field, all of them rich in minerals and nutrients. These byproducts are obtained from date fresh or dried fruits by applying special processes and using high quality equipment.
