What exactly is Rotab ?
Dates are the fruit of a palm tree that thrives in hotter regions. Dates have a lot of nutritional benefits. One 100-gram meal contains around 20% of a person’s daily potassium requirements, as well as 7 grams of fiber, 2 grams of protein, and a variety of antioxidants. This fruit can also be found in portions of Khuzestan province, particularly in Behbahan, and parts of Hormozgan province. Kebab dates are grown at Khormoj, Khesht and Kamarj, Qir and Karzin, Farashband, Tabas, and Tangestan, among other places.
What actually is rotab and how is it made?
Rotab is the stage preceding dates, when the moisture content is higher and the sugar content is lower. As a result, this product has a silky texture and a delectable flavor. Is there a difference between rotab and dates?
Many individuals mistakenly believe that rotab and dates are the same things. However, there are some distinctions between the two. Date fruit goes through four stages of ripening. Color, taste, and size variations occur during these stages. It is hard and green in color at first, with a bitter and slightly astringent flavor. Its moisture level diminishes as time passes, while its sugar content rises until it is fully ripe. Rotab is the stage before ripeness when there is more moisture and less sugar. The texture of the ripe date grows firmer, and the moisture content decreases.
What are the qualities and properties of rotab?
Honey rotab has a moisture content of 30 to 45 percent. In comparison to dates, the honeyed rotab is soft and silky, with a high likelihood of water penetration. The inside of the rotab has a soft, juicy, and delicate feel. This texture’s color ranges from amber to red, with parts of it being brown. Honey’s high moisture content makes it ideal for quenching thirst. Dates have been shown to improve skin smoothness, and rotab with a big amount of moisture has a twofold effect on the skin. Because Rotab contains less sugar, it is less harmful to diabetics. As a result, diabetic individuals should consume more rotab rather than ripe and sweet dates.
How do you keep honeyed rotab safe?
When compared to ripe dates, Rotab has more moisture and less sugar. This product is more difficult to keep than ripe dates due to the high humidity in Rotab. Because humidity is so sensitive and delicate, it can easily become sour and rotting when combined with this volume of moisture and a small amount of heat. As a result, in cold weather, this product should always be kept in the refrigerator.
Rotab kebab is one of Iran’s most well-known rotabs. Because of its golden tint, this rotab is known as honeyed rotab. Honeyed rotab should be kept at a temperature of -6 to -20 degrees Celsius. Of course, you must keep in mind that storing the product at such a low temperature would obliterate its functional features.
